an old fave with a twist

I started doing this because

  1. I love cooking
  2. my kids get bored with their school lunches
  3. My oldest gets stomach migraines which we think is triggered by certain foods.

The last point is awful…….she gets sick and is pain for around 12 hours and we try our best to hold them off and make them less frequent. Her attacks are less, now we monitor whats in our food.

anyway today I looked into my cupboard and decided to make a slice to put into lunch boxes, every now and then its nice to put in a little treat.

Carrot,coconut, weetbix slice with Honey Icing

1 cup of plain flour

1/3 cup of Brown sugar

1/2 cup of coconut

1/2 a large carrot or 1 medium

4 weetbix crushed

70g of melted butter

1/4 cup water

Pre- heat oven to 180 degrees

add all the ingredients into one bowl, melt the butter and mix through gradually add the water until all ingredients are combined. Put into a lined slice tray, Spread out evenly.   bake to 15-20mins until brown

to make Icing

1 cup of Icing sugar

1 tablespoon of honey

1 tablespoon of melted butter

teaspoon of vanilla

splash of milk

add all ingredients until a paste is formed.
