Can you believe I got asked for sandwiches for lunch last week? it was only for one day and I made them. Violet ate hers but Issy’s came home. Pretty frustrating seeing she was the one who asked for them. I think I have more of an issue feeding the toddler Millie more than anything. One day she will love it the next it gets thrown on the floor. I am contemplating putting a tarp down permanently.
so tomorrow the girls are having vegetable fritters with a mint yogurt sauce. it was tried and tested and given the thumbs up. This an awesome choice because its got protein and veggies perfect for feeding their brains ready to learn!
Vegetable Fritters with yoghurt dipping sauce
1 large Zucchini
1/2 a large sweet potato
2 ears of corn
1/2 cup of s/r flour
2 tablespoons of chopped chives
Grate the zucchini and sweet potato and cut the kernals off corn off the cob. put it all in a bowl along with the chives. Mix through the flour.Beat the eggs and then stir through vegetable mixture. Heat the fry pan with olive oil and cook until the edges are slightly brown, then flip over. continue untill mixture is all cooked.
Yogurt and mint dipping sauce.
1/2 cup of natural or greek yogurt
one handful of chopped mint.
This makes a fair amount and you can freeze them for later on. The fritters are handy to have for a side for your little peoples dinner if you’re feeling a little lazy.
