Just a quick one

I am huge fan of throwing everything into one bowl. This muffin recipe is just that and so easy. I used some easter eggs that were crushed up but you could really add what you like.

I won a easter raffle and I love chocolate too much so some of them needed to go.


Strawberry and chocolate Muffins


2 cups of s/r flour

teaspoon of baking powder

3/4 cup of caster sugar

2 eggs

pinch of salt

3/4 cup of yoghurt ( any type)

1/4 cup of rice bran oil

1/4 cup of milk

teaspoon of vanilla

1/2 punett of strawberries

1 medium sized choclate egg


pre- heat oven to 180 degrees

put all dry ingredients into a bowl, then add eggs and yogurt, start mixing then add milk,oil and vanilla until all combined.This when I cut up the strawberries and added the crushed Easter egg. give it a quick mix. divide the batter in your muffin tray and cook for 15-20mins ( depends on how big you want your muffins to be),or until a skewer comes out clean.
