This week is my middle girls 5th Birthday. She is a fabulous child, funny,silly,stubborn and very moody. All of these rolled into one make my Violet. We were just looking through baby photos and videos of 5 years ago, the memories are very happy and we are very fortunate.
Tomorrow is her actual birthday and we having a party for her this saturday. I promise to blog about it and tell you about the food we served and the set up. I am not a fan having plates of lollies and chips thrown on a table not only is it un-healthy but lazy. I am sure we all agree.
One of the things I have come up with is a Chocolate brownie. This has been tried and tested and made twice! It is very tasty and not as naughty………….still a little bit naughty.
200g dark choc
1 cup of gluten-free plain flour ( or normal) 2x eggs
1/4 cup of rice bran oil
1/4 cup low-fat plain yoghurt
2 tablespoons of coco powder
1 cup of brown sugar
Heat oven on 180 degrees
Break the chocolate up into a sauce pan or double boiler, melt the chocolate along with half the sugar and half the oil. When melted add the rest of the sugar and oil. Mix through. Add the coco to the flour and mix through. Lightly beat the two eggs with vanilla then add to the chocolate mixture, beat until all blended. Add the flour mixture half at a time. Beat until all mixed through. ( this bit needs a bit of arm work) once this is done add the yoghurt and stir through.
Line a slice pan with baking paper and spread out with a spoon. Put in the oven for 10- 15 mins.
A nice little treat to serve at a party or to have at home.
