Vegan Choc Orange Cupcakes

Every year I make cupcakes for my girls to take to school for their birthday. Only if their birthday is a school day. It’s something special for them to share with their friends.These days there seems to be more allergies in children then when I was at school.  Isabelle’s class has a couple of kids with nut and egg allergies. I am always mindful when I send things to school like this. I don’t want them to be left out and really, how hard is it to do something out of your way?

So when Issy was in prep I came up with this little cupcake number, which I changed a little because Choc Orange was suggested.

It’s really quite easy and quick.

Choc orange Cupcakes

2 1/4 cups of S/R flour

a pinch of Bi-carb

1/2 cup of coco powder

2/3 cup of vegetable oil

teaspoon of vanilla

a cap full of vinegar

1/2 cup of warm water

zest of one orange

juice of one orange

pinch of salt

cup of sugar

pre-heat oven to 180 degrees

add all dry ingredients to one bowl give it a good mix, then add the oil,and water and beat until all mixed through, add the orange zest and orange juice,beat again. Add the vinegar and mix. Then you’re done.

divide into patty tins and cook for 15-20 mins
