Mocha,caramel whoopees

 

I try not to deprive my girls of having a little treat every now and then. Makes their lunch a little more interesting. Plus I don’t mind a little here and there either.

The other day I wanted a little dark chocolate, But didn’t have any in the house as usual. The girls and I liked this one because it was like eating a piece of chocolate.

Mocha whoopee

2 cups plain flour
1cup of brown sugar loosely packed
Tablespoon of instant coffee
in 1/4 cup of water
Tsp. of vanilla
1 egg
100g of butter melted
3 tablespoons of coco powder
Pinch of bicarb
Pinch of salt

Put all dry ingredients in a bowl add the egg and coffee mixture with vanilla and give a little mix then add the melted butter, use your hands to knead the dough. Once mixed through roll into small balls of the same size and flatten slightly with a fork. Cook for 15 mins in a pre- heated oven at 150 degrees.

The whoopee is a little dense which makes it like you’re eating chocolate, and its not overly sweet.

The icing is which makes it sweeter.

 

Caramel Icing

 

1 tablespoon of golden syrup

2 tablespoons of brown sugar

3/4 cup of icing sugar

50g of melted butter

dash of milk

add the butter and milk to icing sugar until its a thick paste.

 

once the whoopee’s are cooled spread the icing on one and sandwich them together.

 

I ate one of these frozen the other day and it was awesome. Let me know how you go
