“sweet treat”

I love chocolate cake. One afternoon while the girls were doing their homework I whipped this little number up. Yes you might have guessed it the “sweet surprise” is sweet potato. I know this isn’t a new idea to put veggies into sweets, I found with the sweet potato it changed the texture into something a little more fudgy without the extra chocolate.

Chocky Cake

2 cups of S/R flour

1/2 cup of coco

1 cup of Caster sugar

dash of Vanilla

2 eggs

1 1/2 cup warm water

200g mashed sweet potato

1/2 cup of espresso

1/2 Rice Bran oil

This type of cake needs to be cooked in a slow oven other wise it will burn on the outside and be raw in the middle.

pre-heat the oven to 150 degrees

Add the flour and coco into a mixing bowl. in a separate bowl beat the eggs and the oil then add the sugar to the egg mixture.

slowly add the water to the dry mixture stir until combined. once mixed add the egg mixture until combined. The next step is to add the mashed sweet potato and beat well. Once mixed add the espresso and beat together.

Once this is done place into a round cake tin and put in the oven for 60mins.

Chocolate Icing

200g of icing sugar

25g of coco

125g of unsalted butter

40ml of milk

beat the butter with the icing sugar and coco, then add the milk.

give it a good mix until all combined.

  1. Oooooooh! Sounds great!!! Will definitely give this a try, thanks Katie! If we were to make them into cupcakes instead – how much would we vary the cooking time by? Ta!

    • It is quite yummy. I don’t really know, they would still have to be on a slow oven. I would try 20 mins then see how it is in the centre with a skewer. I can tell when something is cooked if the cake is a little bouncy
