Banana Bread

My Girls have gone off bananas, well eating them anyway. Every week I always have ripe bananas not getting eaten, it’s annoying.
Banana bread is a great snack and the toddler loves it for breakfast with a side of fruit.

I wouldn’t recommended sending this particular one to school because most schools are nut free, but you can go to town at home. This is a good one if you have dairy/egg allergies because it’s totally vegan.

Banana bread

1/2 cup of plain flour
1/2 almond meal
1 cup of S/R flour
2 mashed Bananas
1/2 cup of honey
teaspoon of mixed spice
1/4 cup of rice bran oil
1/2 cup of warm water
dash of vanilla
1/4 cup of sultanas

Pre heat oven to 180

Put all dry ingredients in a bowl, then add mashed banana, oil, honey and mix through. Once mixed add the water and vanilla. then combine all ingredients. this is so easy anyone could do it. bake in a lined loaf pan for 20-25 mins. when ready the top should be golden.
