My kids love this one. It takes a little while but it’s easy it’s a dinner or a rainy day lunch you can make while you’re busy. All you do is chop and leave.
Ham Hock soup
4x celery stalks
3 cloves of garlic
Tablespoon of oregano
One ham hock
1 litre of water
1 litre of veggie stock
400g tin of tomatoes
1 red capsicum
1 cup of beans cut in 3rds
2/3 cup of Rotini or 1/4 cup of brown rice
2 x bay leaves
Sweat off the celery, carrot, garlic, onion & oregano until the onion softens add the stock and water and ham hock. And simmer on low for 2 hrs. covered.
During this two hours if there is any oil/ fat from the hock skim off the top as much as you can.
Once the 2 hours is up check that ham hock and it should be coming away from the bone. Remove the hock and set aside until cooled a little . While its cooling add the capsicum ( cubed) , beans, tinned tomato and rotini or rice.
Remove the meat from the bone and put back into soup.
Cook for 30 mins and you’re done!
