Scones

I love scones, all types of scones.They aren’t that good for you on a count of all that yummy yummy butter.

I also love my rice bran oil, it’s a great substitute for butter. and in this recipe you don’t even notice the difference. These are fabulous warm with a side of fruit for your toddler.

Ham, cheese and corn Scones

2 cups of plain flour

Teaspoon Baking powder

pinch of salt

1/3 cup of rice bran oil 

200g corn kernels

3/4 cup of grated cheese

25g of chopped ham

Tablespoon of dried parsley

1/2 cup of rice milk

add all the dry ingredients along with the ham and corn to a bowl. Add the oil until just combined, then slowly add the milk try not to over mix. When the dough is just combined turn out on a lightly floured bench. This dough is similar to a normal scone dough so its best you don’t flatten or cut out with a glass. Just leave in in a mound and cut up.

Once all pieces are on a baking tray quickly give them a brush with some milk. Place in a pre-heated oven of 180 degrees for 20 mins.

Best eaten straight out of the oven or keep frozen for later or a easy snack for your little people.
